Pozole Restaurant and Tequila Bar follows a fine tradition of training and educating their bar staff completely about the drinks they make each night. The staff knowledge is important in tequila bars since there are over 50 varieties of tequila available at Pozole today and each has its own unique story.

The tequilas are broken into four broad categories at Pozole with Silver or Gold, Repasado, Anejo, and Premium tequilas. Each type of tequila has subtle differences that affect the taste and add nuance to the drinks at Pozole Restaurant. The Silver and Gold categories are fresh and recent from distilling. The other categories have been aged from several months to eight years or more, usually in oak casks.

The production of tequila is strictly regulated by the Mexican government and it must be distilled from the blue agave plant. Some tequila is 100% from the agave plant, while other types are only required to be 51% agave. This allows some creativity among the tequila producers to enhance the textures and flavor of tequila. Tequila is named for the region it is produced from in Mexico.

Sour Mix Makes Best Margaritas

The type of tequila used in margaritas can vary, but the unique contribution of Pozole Restaurant to its award winning "best margaritas" is the homemade sour mix. If you watch Pozole TV you will see "Jackson, The Tequila Master" demonstrating how the award winning Pozole margarita is created. The standard ingredients used in tequila bars everywhere are all there, such as tequila, triple sec, lime juice and ice. As Jackson notes in the video, the Pozole Sour Mix is the "magic ingredient" added to their margaritas.

Pozole restaurant has fifteen or more varieties of margaritas to suit your tastes available by the glass or pitcher for your enjoyment. Some of the most popular types are the "Perfect Margarita" and the signature "Pozole Margarita" recently voted the winner among the best margaritas in the Virginia Highlands area. There are unique flavors to sample, such as pomegranate, jalapeno, or iguana margaritas, for the more adventurous drinker. A relative new comer to the margarita menu is "El Torro" that mixes the energy drink Red Bull into a margarita setting.
